I like to disincentives torture in my games by making the prisoner often say false information hoping to please the party much like what happens IRL. Torture us extremely unreliable to get accurate information I tend to incentivize being more creative with interrogations using magic or strategies to lower the guard of the interviewee Like the time they

The absolutely terrifying thing about being tortured by a paladin or cleric is that when they take things to far and your life is fading away in sweet realease from the pain. Magic healing no more dying just more pain.
